gracie

My little darling is just 3months old. At least that's what it says on the paperwork she came with. I took these pics right after giving her a bath and my, does she hate bath time!! It's now my mission to change that. She especially hates it when I have to wash her face. She gets clingy after her bath and those puppy dog eyes kill me. I want her happy after a bath, not sad. Bribing her with milk helps but I think she's figured out that she will get her milk regardless. I really need tips on how to make bath time fun. Hmmm.....google?

nugget of wisdom and a serving of sugar....

Who knew? Apparently white sugar is not all bad for you. Hold on...hear me out.
I discovered this interesting little fact when I was in Lesotho earlier this month. I needed a little sugar for an ABS facial scrub and discovered that on the little packets were 'wise' sayings or proverbs. Loved it. Sometimes inspiration comes from the most unexpected of places like on little packets of sugar in a hotel room.

monday morning blues....

Today is a national holiday (Eid al-Fitr). I'm at work. Not ideal.  On the bright side, it's a workshop/huddle, out of the office. This makes it feel less work-ish. Glass half full, people, glass half full.
The mid-morning snacks were just laid out and I think this description just made my day. My first thought was, they cut off the 'e'. But then again what is this chocolate thingy supposed to be numbing? Should I really be eating anything laced with morphine? I am in pain but not 'desperately needing morphine' kinda pain.
It turns out I was way off. Fifty bucks if you can guess what should have been typed.

No luck? You just lost an easy 50 bucks.
Well, these are Chocolate MUFFINS. Yep, muffins.  I did tell you that proof readers will make a killing in Accra.

Happy Monday!

the tropics

Can't beat the tropics for fresh fruits and the variety available. Love most tropical fruits except bananas. Was fine eating bananas as a kid but by my teen years, to even smell bananas made me nauseous. Ingesting anything banana (real or artificially flavored) induced a pukefest.
I however, never turn down mangoes, coconuts, watermelon, pineapples, etc. You can't beat chilled coconut juice/water on a hot day. Pure bliss.
Well, in line with my 'If I can make it, I won't buy it' philosophy, I tried to make desiccated coconut. Sounds real fancy if you don't bake often. Not really. Basically, it's just grated coconut that has been dried so much so that it's true flavor is almost gone. DIY-ing coconut flakes is very easy, the best. It is fresh, not dried within an inch of its life and chock full of flavor!
I plan to bake something with this batch, enrich my salads and smoothies with future batches of these glorious shavings and snack o the pieces not sacrificed to a grater. Simply put, I'm going to be eating & drinking a lot of coconuts. Every. Chance. I. Get.
